A fter years of operating B’s Tacos & More out of a trailer in Londonderry and catering events out of a second food truck, Ken Spilman set up shop in a former pizzeria on Manchester’s West Side.

The food truck industry comes with a whole set of challenges, including needing space to prep, clean dishes and store food. Not to mention different regulations — and fees — in each city and town.
